This is probably one of the easiest appetizers you can throw together and it looks a lot fancier than a plate of cheese and crackers. My mom is 100% Polish, which means I am 50% Polish. Every year on Christmas Eve, we have a huge seafood dinner with all of my aunts/uncles/cousins on my mom’s side of the family. It’s similar to how Italians do the 7 fishes thing. This would be a great appetizer to bring to a party where seafood is the focus (or really just any party in general). You can make the shrimp salad ahead of time and scoop in onto the cucumbers just before serving- can’t get much easier than that! The shrimp salad is really light- it’s made with onion, celery, plain Greek yogurt, and a little bit of mayo and spices. The cucumber acts as the perfect vessel to carry it from the serving tray to your mouth.
NOTE: You can also serve this a meal by layering the cucumbers and salad on a slice of bread. This would serve 4 people and be about 120 calories, 3 grams of fat, and 19 grams of protein (plus whatever the bread adds).

Ingredients:
3/4 lb cooked shrimp, peeled
2 celery stalks, chopped 1 tablespoons red onion, chopped 2 tablespoons light mayonnaise 1 tablespoon fat free Greek yogurt Seasoning salt or adobo seasoning Fresh ground pepper
20 thin slices cucumber (about 1 large)
Directions:
Combine shrimp, celery, onion, mayonnaise, yogurt, and season to taste with seasoning salt or adobo and pepper. Arrange cucumbers on a platter, season with salt and top each slice with a heaping tablespoon of shrimp salad.
