Beans for breakfast? You know it! This simple sandwich is out of this world creamy and delicious (and messy- but, you gotta live a little, right?). It all starts with a toasted whole wheat english muffin. Then you layer on vegetarian refried beans, salsa, guacamole and a fried egg. You can also add a little bit of shredded cheese, but I was trying to keep these as healthy as possible so I left it off. I used ALL store-bought products for this sandwich, which means it was super convenient and took max five minutes to throw together. Make sure you read your labels on those refried beans! Many versions contain lard (EW) so it’s important to find cans that specifically say vegetarian. Why anyone would willingly eat lard is a mystery to me. You can get fancy and use homemade salsa or guacamole if you have it and I’m sure it will be even more delicious. I don’t have that kind of time in the morning (hence “Busy Girl”) and I’m sure most of you don’t either, so join me in embracing wonderful store-bought products like organic salsa and fresh store-made guacamole. Make sure you have lots of napkins handy when you eat this sandwich- I wasn’t lying when I said it’s messy!

Ingredients: 2 whole wheat english muffins, toasted 2 eggs, fried 3 tablespoons vegetarian refried beans 3 tablespoons guacamole (homemade or store-bought) 3 tablespoons salsa (homemade or store-bought) 1 tablespoon chopped fresh cilantro
optional: shredded cheddar or mexican cheese)
Directions:
To assemble, layer the half of the refried beans on two halves of the toasted english muffins. Top with the fried egg, guacamole, fresh salsa, and cilantro. Top with the other halves of the English muffins. Enjoy immediately!
