Chocolate and peanut butter is and probably always will be my favorite flavor combination. Any time it’s an option- that’s what I’m getting. When Amazing Grass sent me their new Protein Superfood all-in-one protein nutrition shake in Chocolate Peanut Butter flavor, my hopes were so high that I would love it. I’m happy to say that I was not disappointed! The Protein Superfood mix is entirely plant-based, gluten free, and vegan. The protein blend is made from pea protein, hemp protein, chia, and quinoa. Each serving contains 20 grams of protein, along with 7 alkalizing greens and 2 whole servings of fruits and vegetables. It truly is a complete nutritional shake and contains all the elements you need to satisfy your hunger and nourish your body. I will admit- when you open the container it’s obvious that there are greens in this shake. The color is a slightly odd greenish brown and that at first may seem a little off-putting. HAVE NO FEAR. Once you taste it you will be amazed. Actually, once you smell it you will be amazed because it smells delicious. The texture is not chalky like some protein powders tend to be. It’s smooth and creamy and it truly does taste like chocolate peanut butter.
I decided to modify my basic chia pudding recipe to create a protein pudding. I know the title of this recipe seems a little overwhelming, but it’s honestly really easy and very little prep time is involved. It does take some time for the chia pudding to set, but once you make it it’s enough for three servings. I really wanted the peanut butter flavor to shine though, so I assembled the parfaits with layers of the chocolate peanut butter chia pudding and peanut butter banana nice-cream (YUM) and topped it off with peanut butter and mini chocolate chips. Keep the chia pudding in the fridge and the nice-cream in the freezer and assemble whenever you’re in the mood for a sweet and satisfying meal.

Ingredients:
For the Chocolate Peanut Butter Chia Pudding: ½ cup chia seeds 2 cups almond milk
1 packet Chocolate Peanut Butter Protein Superfood
¼ cup pure maple syrup (optional, but recommended)
For the Peanut Butter Banana Nice-Cream:
3 bananas, sliced and frozen ¼ cup peanut butter
2 tablespoons almond milk
To assemble: peanut butter, nondairy chocolate chips (I use Enjoy Life brand)
Directions:
For the Chia Pudding:
Combine all pudding ingredients in a container and wisk to combine. Place in the fridge to set. Remove and wisk every half hour to ensure that the chia seeds are evenly distributed. The pudding should take about two hours to fully set.
For the Nice-Cream:
Combine all ingredients in a high-powered blender or food processor. Blend until smooth and creamy. You can add an additional 1-2 tablespoons of almond milk if you need to.
To assemble: Place about 1/3 of a cup of chia pudding in the bottom of a glass or jar, layer with ¼ cup nice-cream. Repeat one more time. Top with a tablespoon of peanut butter and a sprinkle of chocolate chips, if desired.
