Up until a few years ago, I hated toast. When I thought of toast, it was always slightly burnt, slathered in butter, and usually only something I ate if I wasn’t feeling well. Definitely not very appetizing in my opinion. As I became a little more adventurous with what I ate, I discovered that toast can be SO much more than what I had originally thought. Toast can be sweet or it can be savory. You can pile on all kinds of fruits, veggies, and spreads. Now, I am a very frequent toast eater and I decided to share some of my favorite varieties with you. Each one takes under 5 minutes to make. They are all full of nutrients and very satisfying and filling. You can eat them for breakfast, lunch, a snack, whatever you want. I prefer to us Ezekiel bread because it’s very hearty and doesn’t get floppy when you load it up with toppings. Sometimes I get extra fancy and use an English muffin as my “toast” and that’s delicious too.
- Avocado, Tomato and Basil (V)
Amazingly fresh and flavorful, this toast is so versatile. It definitely tastes like a little slice of summer and will be even MORE amazing with fresh garden tomatoes and basil. - Peanut Butter, Banana and Cinnamon (V)
This toast is like a dessert. It makes a great breakfast, but is also great when you are craving a sweet snack. The sprinkle of cinnamon takes the whole thing over the top. - Avocado, Sriracha and Egg
This is one of my favorite breakfasts. The spicy avocado pairs perfectly with the drippy egg yolk. It’s filled with protein and healthy fats that will power you through your day.
Enjoy!
