If you follow me on Instagram, you probably already know that I love Alter Eco chocolate bars. Not only do they come in delicious flavors like Dark Salted Brown Butter and Burnt Caramel (Um…YUM), but they are Fair Trade and responsibly produced. Each bar is made with respect to people and the environment—it makes you wonder why ALL products are not produced in this manner.
The chocolate bars are so delicious that I found myself incorporating little pieces throughout the day- one square broken up and melted into my oatmeal for breakfast or one square as “dessert” after dinner. These bars are so rich and tasty that one or two squares are truly satisfying. I also began to incorporate some of the other flavors into recipes.
These Mint Chocolate Truffle Energy Bites are one of my new favorite snacks. I have been packing one in my lunch box and eating it around 2:00 when my sweet tooth kicks in. They also smell exactly like Mint Chocolate Chip ice cream, so my office smells awesome after I have one. The Energy Bites contain all good for you, wholesome ingredients: dates, oats, chia seeds, hemp seeds, flax, cacao powder and mint essential oil (or extract) are all processed in a food processor, rolled into balls, and dipped in a melted Alter Eco Dark Mint Chocolate Bar. YUM.
These Mint Chocolate Truffle Energy Bites are chewy, chocolaty, decadent, satisfying and SO EASY to make. They are also both Vegan and Gluten Free so that anyone can enjoy them! What are you waiting for?!

Serves: 12
Ingredients:
12 medjool dates, pitted 1 cup oats, gluten free if desired 1 tablespoon chia seeds 1 tablespoon hemp seeds 1 tablespoons ground flax 2 tablespoons cacao powder 1/8 teaspoon mint essential oil (or ½ teaspoon mint extract)
1 AlterEco Dark Mint chocolate bar
Directions:
Process all ingredients except the AlterEco Dark Mint chocolate bar in a food processor until completely combined and sticky. Roll mixture into 12 balls and place on a parchment-lined baking sheet. Place the baking sheet in the freezer for ten minutes.
Melt the AlterEco Dark Mint chocolate bar in the microwave, stirring frequently so it does not burn. Remove the energy bites from the freezer, dip in the chocolate, and place back on the baking sheet. Repeat with all twelve bites.
Store the Mint Chocolate Truffle Energy Bites in the refrigerator until ready to eat. They should last at least a week in an air-tight container.
