Generally, vegetarians eat a lot of fries. Whenever you go out somewhere and there are little to no vegetarian meal options, they almost always have fries. I have become a little bit of a french fry snob over the last few years. I don’t discriminate—I love both traditional and sweet potato varieties. However, when you think of fries, you don’t exactly think “healthy.” These beauties are baked, not fried. The addition of the chili spice mix adds another dimension to this side dish. I like a nice kick, but if you are anti-spice, simply leave off all the seasonings and toss with coconut oil and salt. This recipe serves 4 people, but I usually halve it since I am cooking for 2. The pictures show half of a recipe (one sweet potato and half of the spice mixture). I served these with BBQ Black Bean Burgers to make a complete, satisfying meal.

Ingredients: 2 medium sweet potatoes 1 tsp chili powder ¼ tsp cayenne pepper ¼ tsp paprika ½ tsp onion powder ½ tsp garlic powder ¼ tsp black pepper ¼ tsp salt (or to taste)
1 tbsp melted coconut oil
Directions:
Preheat oven to 425 degrees. Slice sweet potatoes into strips about ½ inch thick. Add all spices in a small bowl and mix to combine. Melt coconut oil in a large bowl. Add the sweet potatoes to the bowl with the the coconut oil and toss to coat. Sprinkle the spice mix over the sweet potatoes and toss to evenly coat. Bake on foil-lined baking pan (either use nonstick foil or spray with cooking spray) for 12 minutes. Remove from oven, flip, and return for another 12 minutes.
