Our garden is finally churning out fresh veggies and I couldn’t be more excited about it! Our zucchini plants are working over-time right now. We have so much zucchini and I am constantly trying to find different ways to use it. Even if you don’t have a zucchini plant, zucchini is super inexpensive and very abundant in grocery stores and farm stands this time of year- so go and get a few! Zucchini is one of my favorite vegetables because it’s so versatile. You can stuff it, bake it, grill it, roast it, and even bake with it.
