This peanut butter yogurt pie is so easy, it almost feels weird to call it a recipe. It has just 3 ingredients and takes less than 2 minutes to make. I have been making this pie for so long now that I honestly don’t remember where I found the original recipe (if you know-let me know so I can give credit where credit is due!). This pie is healthy enough to be enjoyed at anytime throughout your day, but decadent enough to be enjoyed for dessert. It is loaded with protein from the greek yogurt and the natural peanut butter, which makes it a great source for vegetarians. Anyone who knows me knows that I am obsessed with peanut butter. And that chocolate/peanut butter combination…is there anything better? It’s easy. It’s fast. It’s delicious. Try it. You will not be disappointed. Clearly I got a little excited and didn’t allow my pie to thicken in the fridge before taking the pictures. It does get nice and thick after a few minutes in the fridge.
*HEALTHY TIP: You can make a single-serve variation of this pie by adding a tablespoon of natural peanut butter to one regular container of vanilla yogurt and topping it with mini chocolate chips.

Ingredients: 1 chocolate cookie crust 32 oz. Vanilla Greek yogurt (I used Chobani 0%) ½ cup natural creamy peanut butter
chocolate chips or cacao nibs for topping, if desired
Directions:
Mix the yogurt and the peanut butter in a large bowl. Use a wisk to make sure it is totally combined. Place in the refrigerator to allow pie to firm up and become thicker, or enjoy immediately.
