As you probably already know, I love anything spicy. Naturally, one traditional meat dish I miss most is buffalo chicken-wings, dip, cheesesteak, you name it, I used to LOVE eating it. I still get cravings for it, but I really don’t miss the chicken, I just really miss the hot sauce and ranch/blue cheese dressing that goes along with it. I have made two versions of these Buffalo Cauliflower Bites in the past. This one, and one that is dipped in batter. The one dipped in batter never turns out right for me and always ends up soggy (if you make this version and have tips- I am all ears!). I have had much more success with this batter-less version. It’s easier to make and it’s healthier. I enjoyed these Buffalo Cauliflower Bites with Bolthouse Farms Chunky Blue Cheese yogurt dressing, which is amazing. You can use whatever store-bought dressing you like, or you can make your own. This is a super easy appetizer, snack, or side dish.

Active Time: 10 minutes Total Time: 30 minutes
Serves: 4

1 head fresh cauliflower (about 6 cups), chopped
2 teaspoons garlic powder
pinch of salt
pinch of pepper
1 tablespoon butter, melted
¾ cup Frank’s RedHot hot sauce (or use your favorite brand)

Preheat oven to 450 degrees. Line a large baking tray with nonstick foil, or spray with cooking spray. Set aside.
In a small bowl, mix together the garlic powder, salt, pepper, butter, and hot sauce.
Add the cauliflower to a large, gallon-size ziploc bag and pour in the sauce. Shake until the cauliflower florets are fully coated.
Turn the cauliflower out onto the prepared baking sheet, spread it out, and bake for 20-25 minutes.
Serve with blue cheese or ranch dressing (I prefer Bolthouse Farms Chunky Blue Cheese Yogurt dressing) and celery sticks.
