I have already been eating apples like it’s my job the past few weeks (or months), but Kevin and I went to an Apple Festival last weekend and now I’m apple-obsessed. We ate the most amazing apple fritters and bought fabulous applesauce. After the festival, we went to the grocery store to do our shopping for the week and I knew I was going to continue with the apple theme. I love salads with apples, especially when feta cheese is involved. This salad has spring mix, cucumber, apple, pomegranates, dried cranberries, pepitas, walnuts, and feta. It’s all topped with a sweet and sour apple cider vinaigrette. This salad is perfect for lunch or a light dinner. If you’re not a vegetarian, grilled chicken would be a nice addition for a more filling salad. I portioned this salad for two lunch-sized servings. You can easily halve it for one person! If you’re Vegan, just leave off the feta-no substitutions required.
Note: Don’t get thrown off by the fat content- it comes from the heart-healthy fat in the extra virgin olive oil, pepitas, and walnuts. If you’re looking to lower it anyway, just reduce the amount of dressing you use on your salad or leave off the pepitas.

Ingredients:
For the Salad: 3 cups spring mix ½ cucumber, chopped 1 medium apple, sliced (I used gala, but use whichever type you prefer) 1/8 cup pomegranate seeds 2 tablespoons dried cranberries 2 tablespoons pepitas 1 tablespoon chopped walnuts
1/8 cup crumbled feta cheese
For the Apple Cider Vinaigrette
1½ tablespoons extra virgin olive oil 1½ tablespoons apple cider vinegar 1 tablespoon apple juice ½ teaspoon honey/agave
salt and pepper, to taste
Directions:
Combine all salad ingredients in large salad bowl and set aside. Wisk vinaigrette ingredients together in a small bowl. Pour over the salad and toss to coat. Enjoy!
