One of the things I miss most since being on the no-dairy train is cream cheese. Specifically, a bagel with cream cheese. I was really craving one the other day so I came up with this savory bagel sandwich. You can use whatever bagel you choose- I have used whole wheat, everything, and onion with great results. You can also pile on whatever vegetables you prefer- I used as many as I could fit on my sandwich and it was so messy but so delicious. The Avocado Spread is so creamy and flavorful that you will never miss the cream cheese. You could even use the Avocado Spread on crackers or as a veggie dip. My husband really enjoyed this for lunch, too. They were so quick to make after a tough workout at the gym and were very filling and satisfying. This sandwich took a total of five minutes to whip up for an easy, healthy lunch. Pair it with some fresh fruit and you have an awesome, complete meal!

Serves: 2
Ingredients: 2 bagels 1 avocado ½ teaspoon garlic powder ½ teaspoon onion powder 1 teaspoon chopped fresh parsley ½ teaspoon chopped fresh dill 1 tablespoon lemon juice
salt and pepper, to taste
For serving: lettuce or spinach, sliced tomato, shredded carrots, bean sprouts, red onions, sliced cucumber, or any veggies of your choosing.
Directions:
Slice your bagels in half and toast them. While they are toasting, mash the avocado with all of the spices. Taste and adjust seasonings to your liking. To assemble the bagel sandwiches, spread the Herbed Avocado over the bagels and top with veggies.
