Whenever my husband is trying a new, healthy food for the first time (which is frequently), I always prep him by telling him to NOT expect it to taste like its unhealthy counterpart. A veggie burger will always taste like a veggie burger. No matter how you prepare it, it will never taste like a traditional ground beef burger…because it’s not a traditional ground beef burger. But that doesn’t mean a veggie burger isn’t absolutely delicious in its own right. If you expect kale chips to taste like potato chips-you will be vastly disappointed. But if you think about potato chips and why people enjoy them so much, it comes down to two things: salt and crunch. These kale chips satisfy both of those cravings in a much healthier way. They are quite spicy, but if you’d prefer a more mild chip, simply reduce or omit the cayenne pepper all together. Unlike potato chips, you can eat a boat load of these without feeling guilty. Enjoy!

Serves 2
Ingredients: ½ a bunch of kale (I use about 3-4 large leaves) ½ tbsp. olive oil 2 tbsp nutritional yeast ½ tsp paprika 1 tsp chili powder 1 tsp onion powder 1/8 tsp coarse black pepper 1/8 tsp salt
1/8 cayenne pepper
Directions:
Preheat oven to 300 degrees. Tear kale leaves into slightly larger than bite-sized pieces (they will shrink in the oven), being sure to remove large stems. Place into a large bowl. Add olive oil and massage kale to coat. In a small bowl, combine the remaining ingredients. Once combined, sprinkle seasonings on the kale and toss to combine.
Bake for 22 minutes, rotating pan halfway through cooking time. Allow to cool for 2-3 minutes on the sheet before eating. Enjoy immediately, as they lose crispiness with time.
