Looking for a perfect summertime appetizer? Look no further than this absolutely gorgeous and delicious Heirloom Tomato & Herbed Ricotta Crostini. Made with heirloom tomatoes and herbed part-skim ricotta cheese, these little toasts are sure to please a crowd. They take less than 5 minutes to make, and the herbed ricotta can even be made ahead of time, if necessary. I am already dreaming of different ways to use this creamy, dreamy herbed ricotta because it’s amazing (white pizza, maybe?). Is there anything that screams summer cuisine more than the combination of ripe heirloom tomatoes and garden fresh basil? I bought a ton of heirloom tomatoes at the store the other day, and I couldn’t wait to use them. I made a delicious pasta salad and used most of them, but I needed to use the rest before they went bad. And ta-da, this appetizer was born. I think I maybe stuffed 3 of these in my mouth before I even took any pictures (oops!). I truly can’t get enough of this appetizer.

Ingredients: 10 slices fresh French Baguette (about 1/3 of the loaf) ½ cup part skim ricotta cheese ½ teaspoon dried dill ½ teaspoon garlic powder ½ teaspoon minced onion ½ teaspoon black pepper ¼ teaspoon salt 1 tablespoon chopped basil, plus additional for garnish
1/3 cup heirloom cherry/grape tomatoes, sliced
Directions:
Toast baguette slices in toaster oven until crisp. Meanwhile, mix the ricotta, dried herbs, salt, pepper, and basil in a small bowl. Remove toasted bread from toaster oven and evenly divide herbed ricotta over the ten slices. Top each slice with 2-3 tomatoes. Garnish with additional fresh basil, if desired.
