Serves: 9-12

Ingredients:

For the crust:

  • 1 1/2 cups almond flour
  • 1/4 cup coconut oil (melted)
  • 1/4 cup maple syrup
  • 1/4 teaspoon salt

For the filling:

  • 3 cups apples (peeled and diced)
  • 1/4 cup coconut sugar
  • 1 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1 tablespoon lemon juice

For the caramel:

  • 1/2 cup coconut cream
  • 1/4 cup maple syrup
  • 1 teaspoon vanilla extract

Directions:

  • Preheat the Oven:
    Preheat your oven to 350°F (175°C) and line an 8×8-inch baking dish with parchment paper.
  • Make the Crust:
    In a mixing bowl, combine almond flour, melted coconut oil, maple syrup, and salt. Press the mixture into the bottom of the prepared baking dish.
  • Prepare the Filling:
    In another bowl, mix the diced apples, coconut sugar, cinnamon, nutmeg, and lemon juice until well combined. Spread the apple mixture evenly over the crust.
  • Prepare the Caramel:
    In a small saucepan, combine coconut cream, maple syrup, and vanilla extract over medium heat. Stir until smooth and slightly thickened, about 5 minutes. Drizzle the caramel over the apples.
  • Bake:
    Bake for 25-30 minutes, or until the apples are tender and the edges are golden.
  • Cool and Serve:
    Allow the bars to cool in the pan for at least 30 minutes before slicing. Enjoy warm or chilled!
