Serves: 4

Ingredients:

  • 1 pound boneless, skinless chicken thighs or breasts (cut into bite-sized pieces)
  • 2 cups broccoli florets
  • 1 red bell pepper (sliced)
  • 1 cup snap peas
  • 3 tablespoons honey
  • 3 tablespoons soy sauce (or tamari for gluten-free)
  • 2 cloves garlic (minced)
  • 2 tablespoons olive oil
  • Salt and pepper, to taste
  • Optional: sesame seeds and green onions for garnish

Directions:

  • Preheat Oven:
    Preheat your oven to 400°F (200°C) and line a large baking sheet with parchment paper.
  • Prepare the Sauce:
    In a small bowl, whisk together honey, soy sauce, minced garlic, and olive oil.
  • Combine Ingredients:
    In a large bowl, toss the chicken pieces with half of the honey garlic sauce, salt, and pepper until evenly coated.
  • Arrange on Baking Sheet:
    Spread the coated chicken on one side of the prepared baking sheet. On the other side, add the broccoli, bell pepper, and snap peas. Drizzle the remaining sauce over the veggies.
  • Bake:
    Bake in the preheated oven for 25-30 minutes, or until the chicken is cooked through and the vegetables are tender.
  • Serve:
    Remove from the oven and let cool slightly before serving. Garnish with sesame seeds and chopped green onions if desired.
