When I saw this recipe for Cool Ranch Dorito Hummus on Chocolate Covered Katie, I knew I HAD to try it immediately. As a kid, I used to love Cool Ranch Doritos. I haven’t eaten them in so long, but the thought of being able to capture the cool ranch flavor and mix it into a healthy snack was so intriguing to me. I will say that this hummus doesn’t taste exactly like Cool Ranch Doritos, but it’s close enough that it truly does satisfy that craving. It has the right combination of garlicy spice and the little “zing” that so prominent in the cool ranch flavoring. It’s made with only a few, natural ingredients, which is definitely better than the laundry-list of ingredients and preservatives that is printed on the Doritos bag. I served the hummus with raw veggies and pretzels, but it would also be great with Pita chips, especially to make the experience more similar to snacking on Doritos. Chocolate Covered Katie also posted a recipe for the Nacho cheese flavored Dorito hummus, but that flavor was never my thing.

FAIR WARNING: this recipe contains one activity that is absolutely annoying and pretty time-consuming: peeling chickpeas. The original recipe says it’s optional, but honestly, if you want smooth and creamy hummus (who doesn’t?!), you need to take the time to peel the chickpeas. I just put them all in a collider, rinse them, and then start peeling them by giving them a little squeeze. The skin is really easy to remove and basically falls off once you apply a tiny bit of pressure. It just takes a while to do them all. I enlisted some help from my husband and we had 2 cans peeled in under 15 minutes. I promise the end result is worth it! It makes a large quantity of hummus and we were able to store it in an air-tight container in the fridge and scoop out lunch-sized portions for the entire work week.

Serves: 20

Ingredients: 2 cans unsalted chickpeas, drained, rinsed, and peeled (optional, but recommended) 1/3 cup water ¼ cup apple cider vinegar 2 ½ tbsp olive oil (or water for a lower fat option, but oil is recommended) 1 tbsp onion powder 2 tsp dried dill 1 ½ tsp garlic powder 1 tsp salt

¼ cup nutritional yeast (optional, but recommended)

Directions:
Combine all ingredients in a high-quality blender or food processor and process until completely smooth. Store in a air-tight container in the refrigerator for up to 5 days.
