Going through my recipe archives, I realized that I have hardly posted any side dish recipes. I have an easy explanation for this- I hardly ever make side dishes. Being a vegetarian, I don’t really make “traditional” meals- a protein, a starchy side, and a vegetable side. I tend to make recipes that contain all three components in one just one dish. Sometimes it’s nice to have everything separate, though. This “Cheesy” Garlic Broccoli is one of my favorite vegetable side dishes. My favorite way to make vegetables in the cooler months is to roast them. They get nice and tender, but still have a crispy crunch and amazing flavor. And SURPRISE: there is actually no cheese in this recipe. This Broccoli is seasoned to perfection and has a slight cheesy taste thanks to Nutritional Yeast. You can generally find nutritional yeast in the Organic section of any large grocery store. Nutritional yeast contains B Vitamins, protein, and iron, which are important for everyone, but especially for vegetarians and vegans. I hope you enjoy this delicious and easy recipe!

Ingredients: 1 head of broccoli (about 3-4 cups) 2 tablespoons extra virgin olive oil 1 tablespoon garlic powder ½ teaspoon sea salt ¼ teaspoon pepper
2 tablespoons nutritional yeast
Directions:
Preheat oven to 450 degrees. Place broccoli florets to a large bowl and drizzle with the olive oil. Massage oil into broccoli. Sprinkle remaining ingredients over the broccoli and toss to evenly distribute. Bake in preheated oven 8-12 minutes.
