What is your favorite Fall flavor? Apple or pumpkin? I literally cannot decide because I love them both so much. So what I’ve been doing recently is combining the two flavors together. These Pumpkin Spice Waffles with Cinnamon Apples make the most perfect Fall breakfast. The waffle is warm, fluffy, and satisfying. The apples on top add a little extra sweetness and texture.
My most favorite time of the week are Saturday and Sunday mornings. There is nothing I enjoy more than sitting down to a special breakfast (e.g. NOT cereal or overnight oats or any other grab and go meal), a steaming cup of coffee, and good conversation with my husband. We usually play relaxing music and pass Connor back and forth for snuggles. It’s the perfect way to unwind after the work week and bring some calmness into the crazy of the weekend. These Pumpkin Spice Waffles truly make our weekend mornings feel special without a ton of work. They mix up in one bowl and I make the cinnamon apples in the microwave for convenience. You can make them stovetop if you’re feeling fancy, but with a newborn I’m just trying to get breakfast on the table quickly.
Active Time: 20 minutes Total Time: 20-30 minutes (depends on waffle iron)
Serves: 4 servings
Ingredients:
1 cup canned pumpkin 2 eggs 3 tablespoons melted vegan butter (I use Earth Balance) 1/4 cup coconut sugar 1 cup unsweetened almond milk 1.5 cups whole wheat flour 1 tablespoon baking powder 1.5 teaspoons baking soda 1 tablespoon pumpkin pie spice 1 teaspoon cinnamon
1/4 teaspoon salt
1-2 apples (granny smith, gala, fuji, or similar)
1 tablespoon cinnamon
Directions: Preheat waffle iron. Mix first 5 ingredients in a large mixing bowl. Add the flour, baking powder, baking soda, pumpkin pie spice, cinnamon, and salt. Stir until all ingredients are incorporated. Don’t over-mix.
Scoop batter into waffle iron and cook according to manufacturer’s directions. I get four large waffles out of this recipe.
Meanwhile, peel and thinly slice the apples. Place them in a microwave-safe bowl and sprinkle with cinnamon. Microwave for about 2 minutes or until soft. Stir well so that apples are fully coated in the cinnamon.
Top the Pumpkin Spice Waffles with a scoop of cinnamon apples and serve immediately.
