Serves: 6-8

Ingredients:

  • 12 Medjool dates (pitted)
  • 6 ounces chorizo (removed from casing)
  • 12 slices bacon
  • Optional: toothpicks for securing

Directions:

  • Preheat the Oven:
    Preheat your oven to 400°F (200°C).
  • Prepare the Chorizo Filling:
    In a skillet over medium heat, cook the chorizo until browned and fully cooked, about 5-7 minutes. Remove from heat and let cool slightly.
  • Stuff the Dates:
    Take each pitted date and stuff it with about a teaspoon of the cooked chorizo.
  • Wrap with Bacon:
    Cut the bacon slices in half and wrap each stuffed date with a half slice of bacon. Secure with a toothpick if needed.
  • Bake:
    Place the wrapped dates on a baking sheet lined with parchment paper. Bake for 20-25 minutes, or until the bacon is crispy and browned.
