These No-Bake Energy Bites are the perfect grab-and-go snack for any time of the day! Packed with wholesome ingredients, they’re easy to make and incredibly delicious. Plus, you can customize them to your taste!

Why You’ll Love These Bites

Whether you need a quick breakfast, a pre-workout snack, or a midday pick-me-up, these energy bites are a nutritious option that will keep you energized. With a combination of oats, nut butter, and sweeteners, they provide a satisfying balance of protein, healthy fats, and fiber.

In the name of being festive, I decided to make a Holiday Spice Granola. It’s essentially Gingerbread flavored with dried cranberries mixed in for some added color, flavor, and texture. I have been bringing it to work as a mid-morning snack, and it’s been keeping me away from all of the sweets in the faculty room (although I couldn’t resist grabbing a few of the Philadelphia Pretzel bites that were there yesterday…).

This Holiday Spice Granola also makes a great gift. Just pour some into a mason jar and tie a ribbon around the lid and you are good to go! I know I’ll be making this granola all winter long. Prep Time: 10 minutes Chill Time: 30 minutes
Serves: about 12 bites

Ingredients:

  • 1 cup rolled oats (gluten-free if needed)
  • 1/2 cup nut butter (like almond or peanut butter)
  • 1/3 cup honey or maple syrup
  • 1/2 cup ground flaxseed or chia seeds
  • 1/2 cup mini chocolate chips (optional)
  • 1/2 teaspoon vanilla extract
  • A pinch of salt

Directions:

  • Mix Ingredients:
    In a large bowl, combine rolled oats, nut butter, honey, ground flaxseed, chocolate chips, vanilla extract, and salt. Stir until all the ingredients are well mixed and form a sticky mixture.
  • Form the Bites:
    Using your hands, scoop out small portions of the mixture and roll them into bite-sized balls.
  • Chill:
    Place the energy bites on a baking sheet lined with parchment paper. Refrigerate for at least 30 minutes to allow them to firm up.
  • Store:
    Once chilled, transfer the energy bites to an airtight container. They can be kept in the refrigerator for up to a week or in the freezer for longer storage.

These No-Bake Energy Bites are not only delicious but also highly customizable. Feel free to experiment with your favorite mix-ins, such as dried fruit, nuts, or seeds. Enjoy these nutritious snacks anytime you need a boost!

Notes (about 10 flavors)

  • Cinnamon Roll

Inspired by the Larabar flavor, these bites are bursting with cinnamon and a hint of vanilla, making them taste just like cinnamon rolls. You can enjoy them as is or enhance them with raisins and chopped nuts for added texture.

  • 5-Ingredient

This is the classic, straightforward energy bite recipe, featuring just five simple ingredients. It serves as the foundation for all the other flavor variations. I like to sneak in a dash of vanilla, making it six ingredients—but who’s counting, right?

  • No-Bake Cookie

These bites are reminiscent of the beloved childhood cookie, combining chocolate and oats into an energy-packed treat with significantly less sugar than traditional cookies.

  • Monster Cookie

Inspired by the classic cookie, these bites include peanut butter and M&M’s. I use the Unreal brand for M&M’s, as they contain cleaner ingredients. If you’re looking for vegan options, be sure to check the labels, as many candy-coated chocolates are not vegan. Unreal also offers a vegan peanut M&M.

  • Strawberry

For this flavor, I use freeze-dried strawberries, although dried strawberries will work as well. The berry flavor is beautifully complemented by cinnamon and a hint of lemon.

  • Cake Batter

This fun flavor is inspired by funfetti cake, featuring colorful sprinkles and a delightful vanilla cookie taste. I use Color Kitchen sprinkles, which are made with all-natural colors, avoiding artificial dyes.

  • Apple Pie

Using freeze-dried apples, similar to the strawberry bites, these energy bites capture the essence of apple pie. Chopped dried apples can also be a great alternative. Availability of dried fruit can vary at health food stores, so I grab whichever option I find.

  • Blueberry Muffin

For this flavor, I use fruit juice-sweetened dried blueberries. I don’t recommend freeze-dried blueberries, as they often lack flavor. This recipe is inspired by my Paleo Blueberry Muffins and features a touch of cinnamon and lemon to enhance the blueberry flavor.

  • Chocolate Chip Cookie

These bites take the classic energy bite recipe and add mini chocolate chips, with optional chopped nuts for a delightful crunch in every bite.

  • Cherry Pie

Using tart, fruit juice-sweetened dried cherries, these bites deliver a deliciously tart flavor that brings to mind the taste of cherry pie.
