Ingredients:

  • 1 cup fresh spinach (washed and chopped)
  • 2 large eggs (or 1/2 cup egg whites for a lighter option)
  • 1/4 cup crumbled feta cheese
  • 1 tablespoon olive oil
  • 1/2 teaspoon garlic powder
  • Salt and pepper, to taste
  • Fresh herbs (optional, for garnish)

Directions:

  • Heat the Pan:
    In a non-stick skillet, heat the olive oil over medium heat.
  • Sauté Spinach:
    Add the chopped spinach to the skillet and sauté for 1-2 minutes, until wilted.
  • Whisk the Eggs:
    In a bowl, whisk the eggs with garlic powder, salt, and pepper until well combined.
  • Cook the Scramble:
    Pour the egg mixture into the skillet with the spinach. Allow it to sit for a few seconds before gently stirring. Add the crumbled feta cheese, and cook until the eggs are just set, about 3-4 minutes.
  • Serve:
