Ingredients:

  • 4 boneless, skinless chicken breasts
  • 1 bunch asparagus (trimmed)
  • 2 tablespoons olive oil
  • 2 lemons (zested and juiced)
  • 3 cloves garlic (minced)
  • 1 teaspoon dried oregano
  • Salt and pepper, to taste

Directions:

  • Preheat Oven:
    Preheat your oven to 425°F (220°C).
  • Prepare the Potatoes:
    In a large bowl, toss the baby potatoes with olive oil, minced garlic, chopped rosemary, salt, and pepper until evenly coated.
  • Preheat Oven:
    Preheat your oven to 400°F (200°C) and line a large baking sheet with parchment paper.
  • Prepare the Marinade:
    In a small bowl, whisk together olive oil, lemon zest, lemon juice, minced garlic, oregano, salt, and pepper.
  • Marinate the Chicken:
    Place the chicken breasts on the prepared baking sheet and pour half of the marinade over them, ensuring they are well coated.
  • Add Asparagus:
    Arrange the trimmed asparagus around the chicken on the baking sheet. Drizzle the remaining marinade over the asparagus.
  • Bake:
