Prep Time: 15 minutes        Cook Time: 50-60 minutes
Serves: 6

Ingredients:

  • 1 pound lean ground beef (or turkey)
  • 1 cup rolled oats (or gluten-free oats)
  • 1/2 cup diced onion
  • 1/2 cup grated carrot
  • 2 cloves garlic (minced)
  • 1/4 cup ketchup (plus more for topping)
  • 1 egg (beaten)
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon dried oregano
  • Salt and pepper, to taste

Directions:

  • Preheat Oven:
    Preheat your oven to 350°F (175°C) and lightly grease a loaf pan.
  • Combine Ingredients:
    In a large bowl, mix together the ground beef, oats, diced onion, grated carrot, minced garlic, ketchup, beaten egg, Worcestershire sauce, oregano, salt, and pepper until well combined.
  • Form the Meatloaf:
    Transfer the mixture to the prepared loaf pan and shape it into a loaf. Spread a layer of ketchup on top for added flavor.
  • Bake:
    Bake in the preheated oven for 50-60 minutes, or until the meatloaf is cooked through and reaches an internal temperature of 160°F (70°C).
  • Cool and Portion:
    Once cooked, let the meatloaf cool for a few minutes before slicing. Portion into meal prep containers and store in the fridge.
