Serves: 12

Ingredients:

  • 1 cup almond butter
  • 1/2 cup coconut sugar
  • 1/4 cup unsweetened cocoa powder
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup dark chocolate chips

Directions:

  • Preheat the Oven:
    Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • Mix Ingredients:
    In a mixing bowl, combine the almond butter, coconut sugar, cocoa powder, egg, vanilla extract, baking soda, and salt. Mix until well combined.
  • Fold in Chocolate Chips:
    Gently fold in the dark chocolate chips until evenly distributed throughout the dough.
  • Scoop and Bake:
    Using a tablespoon, scoop the dough onto the prepared baking sheet, spacing them about 2 inches apart. Flatten them slightly with the back of the spoon.
  • Bake:
    Bake for 10-12 minutes, or until the edges are set but the centers remain soft. They will firm up as they cool.
  • Cool and Serve:
    Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely. Enjoy!
