Cinnamon Peach Oatmeal with Bare Banana Chips (V, GF)

Last week, I read “Shut Up and Run” by Robin Arzon (literally in less than 24 hours because it was that good) and it motivated me to push myself a little further in my running. I usually run three miles three times a week, but I decided to work towards running a 10k. I’m using the C210K app to help me get there and so far, it’s going great. River does all of the runs with me, so I have to be extra careful to run in the early morning or right before the sun sets so that he doesn’t get too hot. If you haven’t read the book, I highly recommend it- especially if you need a little bit of fitness motivation! When you work out hard, It’s really important to fuel your body with the appropriate nutrients. My go-to breakfast on days when I run is oatmeal. This Cinnamon Peach Oatmeal with Bare Banana Chips has quickly become my new favorite!

Bare Cinnamon Banana Chips  are made with just two ingredients: sliced, ripe bananas and cinnamon, and then are slowly baked into a super crunchy chip. They contain absolutely no artificial ingredients. The chips are delicious on their own, but the second I tried them, I knew I wanted to incorporate them into an oatmeal recipe. When I make oatmeal, I like to utilize different flavors and textures to make it truly delicious. Plain oats can be a little blah if you don’t spice them up with toppings. The Bare Cinnamon Banana Chips added both sweetness and crunch. Peaches are in season this time of year, so I sliced up a peach to top my oatmeal as well.

Bare Chips come in a wide variety of flavors. I was sent the following flavors to try, in addition to the Bare Cinnamon Banana Chips: Toasted Coconut Chips, Honey Coconut Chips, Sweet & Heat Coconut Chips, Chocolate Coconut Chips, Simply Banana Chips, and Cocoa Banana Chips. I honestly loved every single flavor, but my absolute favorites are the Cinnamon Banana Chips, Sweet & Heat Coconut Chips (you MUST try them- they are unreal), and the Honey Coconut Chips. Keep an eye out for upcoming recipes using the coconut chips! Bare also makes apple chips that are great eaten straight from the bag or crumbled on salads! I love that Bare chips are made with real, simple ingredients that are good for you. That’s my kind of snack!

Serves: 1

Ingredients: ½ cup gluten free oats ½ cup almond milk ½ cup water pinch of salt 1 teaspoon cinnamon ½ of a peach, sliced ¼ cup Bare Cinnamon Banana Chips 1 tablespoon chopped walnuts

1 tablespoon pure maple syrup

Directions:
Boil almond milk, water, and a pinch of salt in a saucepan over medium-high heat. Add the oats and cinnamon and cook, stirring frequently until thick and creamy, about 5-7 minutes. Remove from the heat and transfer the oats into a serving bowls. Top the oats with the sliced peach, Bare Banana Chips, chopped walnuts, and 2 tablespoons of pure maple syrup. Serve immediately.
