In the winter months, the last thing I want to do is drink an icy beverage. Now that the weather is getting warmer, I’m back on a smoothie kick. I love a good green smoothie. They seem to be a total craze right now, with everyone adding greens to their favorite smoothie recipes. I am all for this! However, I feel like some other veggies deserve some love too! This smoothie is inspired by the classic cake, which is one of my absolute favorites. It features Bolthouse Farms 100% Carrot Juice. Carrots contain a laundry list of vitamins, including A, C, E, B vitamins, and potassium. The benefits of carrot juice are literally amazing. Not only does it improve eyesight and digestion, but it also helps to regulate your blood sugar, promotes lung health, and helps to improve skin damage (like acne and psoriasis). Some studies have also shown that carrot juice may decrease the occurrence of breast, larynx, lung, cervix, prostate, colon, and bladder cancers. These are some amazing benefits! This smoothie also contains greek yogurt and chia seeds for an added boost of protein, as well as bananas, shredded coconut, and almond milk. Such a delicious combination! This smoothie is great for breakfast or a post-workout snack. I pack it for my husband as a mid-morning snack to hold him over between breakfast and lunch. Everyone in my family, even the skeptics, has given this smoothie a stamp of approval. You can even make this the night before and keep refrigerated until ready to drink. It may separate a little, but give it a shake and you’re good to go!
*HEALTHY TIP: Whenever you have overripe bananas that you’re ready to get rid off-DON’T throw them away. Slice it and freeze in a freezer bag. Frozen bananas give smoothies a really creamy consistency, and can also be used for banana icecream/nicecream/banana whip (to be featured on the blog later). They are great to keep around and you will definitely use them!

Ingredients: 1 banana, sliced and frozen 1 cup carrot juice (I use Bolthouse Farms 100% Carrot Juice) 1 cup almond milk (I use Silk Original Light) 1 container pineapple or vanilla Greek yogurt (I use Chobani) 1 tbsp chia seeds 2 tbsp shredded coconut Handful of ice cubes
optional: vanilla protein powder
Directions:
Put all ingredients into a high-powered blender (such as a Vitamix or Ninja). Blend on medium-high speed until smooth. Pour into tall glasses and enjoy!
